Beef and Barley Stew

Course Soup

Ingredients
  

  • 1 lbs lean ground beef
  • 2 tbsp olive oil
  • 4 medium carrots peeled and chopped
  • 4 ribs celery chopped
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp minced garlic
  • ½ tsp oregano
  • ½ tsp thyme
  • ¼ tsp basil
  • ¼ cup tomato paste
  • 4 cups low sodium broth
  • 2 cups water
  • 2 cups diced tomatoes
  • 1 cup pearl barley, rinsed

Instructions
 

  • Brown beef in a large pot over medium heat with oil until cooked through.
  • Add veggies, salt, and pepper. Cook for 5 minutes.
  • Add garlic and spices. Cook for 3 minutes.
  • Add tomato paste, broth, and water. Stir and cook for 15 minutes, covered.
  • Add tomatoes and barley. Stir, cover, and cook for 30 minutes.
  • Serve and enjoy!
