Breakfast Burritos

Ingredients
  

  • 2 tbsp olive oil
  • 1 green pepper diced
  • ½ medium onion diced
  • 1 tsp chili powder
  • ½ tsp cumin
  • 1 15 oz can black beans drained and rinsed
  • 8 whole eggs
  • 1 ½ cups cheddar cheese shredded
  • 6 10 inch tortillas
  • salt and pepper

Instructions
 

  • Heat oil in a skillet over medium heat. Add peppers, onions, and chili powder.
  • Use salt and pepper to taste. Saute for 4 minutes. Remove from pan and set aside.
  • In a separate bowl, whisk eggs. Add to skillet and scramble eggs.
  • Add beans to skillet and cook until heated.
  • Assemble burritos by splitting cheese, veggie, and egg mixtures between the 6 tortillas. Be sure to leave room at one side for folding. Roll burrito.
  • Heat skillet to medium heat. Place burritos seam side down and cook for 1-2 minutes to seal edge.
  • Roll in parchment paper and store in a freezer bag.
  • To reheat- microwave for 3-4 minutes.
  • Serve with toppings such as salsa, hot sauce, avocado, etc.
