Heat oil in a skillet over medium heat. Add peppers, onions, and chili powder.
Use salt and pepper to taste. Saute for 4 minutes. Remove from pan and set aside.
In a separate bowl, whisk eggs. Add to skillet and scramble eggs.
Add beans to skillet and cook until heated.
Assemble burritos by splitting cheese, veggie, and egg mixtures between the 6 tortillas. Be sure to leave room at one side for folding. Roll burrito.
Heat skillet to medium heat. Place burritos seam side down and cook for 1-2 minutes to seal edge.
Roll in parchment paper and store in a freezer bag.
To reheat- microwave for 3-4 minutes.
Serve with toppings such as salsa, hot sauce, avocado, etc.
