Breakfast Sandwiches

Ingredients
  

  • ½ tbsp olive oil
  • 3 cups baby spinach
  • 8 eggs
  • ½ cup cottage cheese
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • Dash of cayenne pepper (optional)
  • 6 English muffins
  • 6 cooked sausage patties pork, chicken, turkey
  • 6 slices cheddar cheese

Instructions
 

  • Preheat oven to 350*F. Spray 9x13 pan with oil, set aside.
  • Heat oil in a large skillet over medium heat. Add spinach and cook until wilted. Set aside.
  • In a large bowl, whisk eggs, cottage cheese, and seasonings.
  • Add spinach to egg mixture and whisk again.
  • Pour mixture into pan. Bake for 15 minutes or until eggs are cooked through.
  • Let cool and cut into 6 squares.
  • Assemble sandwich with English muffin, egg, sausage, and cheese.
  • Wrap in parchment paper and place into a freezer bag.
  • To reheat, microwave for 2 minutes or airfry to 5-6 minutes.
