Breakfast Sweet Potatoes

Ingredients
  

  • 1 Sweet Potato (large)
  • 2 Eggs
  • 1 tsp Extra Virgin Olive Oil
  • Sea Salt (to taste)
  • Black Pepper (to taste)

Instructions
 

  • Preheat oven to 400*F. Line a baking sheet with parchment paper or foil and spread oil onto sheet.
  • Slice sweet potato in half lengthwise. Place on baking sheet.
  • Bake for 30 minutes.
  • Scoop out a bit of the sweet potato to make room for the eggs.
  • Crack the eggs into the potatoes, sprinkle with salt and pepper, and bake for 15 minutes.
  • Add toppings as you’d like such as: avocado, herbs, hot sauce, etc.
