Broccoli Cheddar Soup

Course Soup

Ingredients
  

  • 1 tbsp olive oil
  • ½ medium onion diced
  • ¼ cup butter
  • ¼ cup flour
  • 2 cups milk
  • 2 cups chicken stock
  • 1 ½ cups broccoli florets chopped
  • 3 carrots peeled and chopped
  • 1 rib celery chopped
  • 2 ½ cups sharp cheddar cheese shredded
  • salt and pepper to taste

Instructions
 

  • Heat oil in a skillet over medium-high heat. Add onion and cook for 5 minutes. Set aside.
  • In a large pot, melt butter over medium-low heat. Whisk in flour and cook for 4 minutes, whisking continuously.
  • Slowly add in milk, continuing to whisk constantly.
  • Add in chicken broth and bring to a simmer for 15-20 minutes or until thickened.
  • Add in broccoli, carrots, celery, and onion. Simmer for 15 minutes.
  • Stir in cheese and season with salt and pepper.
