Chicken Burrito Bowl

Ingredients
  

  • 6 cups cooked Spanish rice
  • 1 ½ lbs chicken breast, diced
  • 2 tsp cumin
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tbsp olive oil
  • 2 15 oz cans black beans drained and rinsed
  • 1 cup Monterey jack cheese
  • ½ cup salsa

Instructions
 

  • Mix together seasonings and toss with diced chicken.
  • Heat oil in a large skillet over medium-high heat. Cook chicken for 8-10 minutes until cooked through.
  • If eating now, layer components and top with toppings.
  • If freezing, lay out 8 airtight containers. Layer rice, beans, chicken, salsa and cheese.
  • Place plastic wrap over the container, followed by the lid.
  • When reheating, remove plastic wrap and microwave for 2 minutes. Stir halfway through. Top with toppings and enjoy.

Notes

Optional toppings: lettuce, sour cream, avocado, cilantro, onions, lime, pic de gallo or salsa
