Ingredients

cooked Spanish rice

chicken breast, diced

cumin

salt

pepper

olive oil

cans black beans
drained and rinsed

cup
Monterey jack cheese
½
cup
salsa
Instructions
Mix together seasonings and toss with diced chicken.
Heat oil in a large skillet over medium-high heat. Cook chicken for 8-10 minutes until cooked through.
If eating now, layer components and top with toppings.
If freezing, lay out 8 airtight containers. Layer rice, beans, chicken, salsa and cheese.
Place plastic wrap over the container, followed by the lid.
When reheating, remove plastic wrap and microwave for 2 minutes. Stir halfway through. Top with toppings and enjoy.
Notes
Optional toppings: lettuce, sour cream, avocado, cilantro, onions, lime, pic de gallo or salsa
