Cut chicken into small ½ inch pieces. Place in a bowl and add 1 tbsp oil, parmesan, Italian seasoning, garlic powder, salt, and pepper. Toss until coated.
Heat a large skillet over medium heat. Add 1 tbsp oil. Cook chicken until cooked through, about 5-7 minutes. Set aside to cool.
For the breadcrumbs, add all breadcrumb ingredients to a small skillet. Cook over medium heat until breadcrumbs are golden brown, about 3 minutes. Set aside to cool.
Prepare lettuce and slice tomatoes in half. In a large bowl, add lettuce, tomatoes, cheese, cooled chicken, cooled breadcrumbs, and Caesar dressing. Toss until evenly mixed.
Divide mixture between 4 tortillas. Roll like a burrito. Serve and enjoy!
