Chicken Fajita Bowl

Ingredients
  

  • 3 cups Rice, cooked
  • lbs Chicken Breasts
  • 4 Bell Peppers
  • 1 Onion, medium
  • ¼ cup Extra Virgin Olive Oil
  • ½ cup Salsa
  • 1 tbsp Chili Powder
  • ½ tsp Cumin
  • 1 tsp Garlic Powder
  • ½ tsp Oregano
  • ¼ tsp Black Pepper
  • 1 tsp Seasoning Salt

Optional Toppings

  • Shredded Cheese
  • Tomatoes, diced
  • Green Onion, chopped
  • Salsa
  • Cilantro
  • Sour Cream
  • Avocado
  • Lime

Instructions
 

  • Preheat oven to 425 *F
  • In a small bowl, combine oil and seasonings. Set aside.
  • Dice chicken, toss with half the oil mixture.
  • Cut pepper and onions into slices. Toss with the remaining half of oil mixture.
  • Place peppers, onions, and chicken onto a baking sheet. Bake for 20-24 minutes, or until chicken is fully cooked. Stir halfway through.
  • Layer cooked rice, chicken and peppers, and toppings into meal prep containers (some optional toppings pay to better on the side until ready to eat).
