Preheat oven to 425 *F
In a small bowl, combine oil and seasonings. Set aside.
Dice chicken, toss with half the oil mixture.
Cut pepper and onions into slices. Toss with the remaining half of oil mixture.
Place peppers, onions, and chicken onto a baking sheet. Bake for 20-24 minutes, or until chicken is fully cooked. Stir halfway through.
Layer cooked rice, chicken and peppers, and toppings into meal prep containers (some optional toppings pay to better on the side until ready to eat).
