Preheat oven to 400*F. Line baking sheet with parchment. Spread pumpkin and zucchini on top. Spray with oil and sprinkle with salt. Roast for 20 minutes.
While squash is roasting, cook couscous in boiling water for 10 minutes. Drain and set aside.
Have a skillet over medium-high heat, cook chorizo for 3-5 minutes, until golden.
In a large bowl, combine all ingredients and toss gently to evenly mix.
