Couscous with Roasted Pumpkin and Chorizo

Ingredients
  

  • 2 cups Pumpkin, diced
  • 2 Zucchini (large), diced
  • cup Pearl Couscous
  • 1 Chorizo, thinly sliced
  • ¼ cup Lemon Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Smoked Paprika
  • Salt (to taste)

Instructions
 

  • Preheat oven to 400*F. Line baking sheet with parchment. Spread pumpkin and zucchini on top. Spray with oil and sprinkle with salt. Roast for 20 minutes.
  • While squash is roasting, cook couscous in boiling water for 10 minutes. Drain and set aside.
  • Have a skillet over medium-high heat, cook chorizo for 3-5 minutes, until golden.
  • In a large bowl, combine all ingredients and toss gently to evenly mix.
