Creamy Mushroom Farro Rissoto

Ingredients

farro

sliced mushrooms

onion
diced

cloves
garlic

vegetable broth
warm

grated Parmesan

olive oil
salt and pepper to taste
Instructions
Heat oil in a large pan, sauté onion and garlic until fragrant.
Add mushrooms, and cook for 5 min.
Stir in farro and gradually add broth, 1 cup at a time, stirring until liquid is absorbed.
Cook until farro is tender and creamy (about 25 min).
Stir in parmesan, season with salt and pepper, serve warm.
Notes
Tips: Add fresh parsley or thyme for extra flavor.
