Set oven to 400°F. Lightly grease a baking dish or line with parchment.
In a small bowl, mix Dijon mustard and olive oil.
In another bowl, combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
Brush each chicken piece with the Dijon mixture, then press into the Parmesan breadcrumb mixture to coat well.
Place chicken in the dish and bake for 20–25 minutes, or until internal temp reaches 165°F and the crust is golden.
Broil for 2–3 minutes at the end for extra crunch.
