Dijon Parmesan Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts (or thighs)
  • ¼ cup Dijon mustard
  • 2 tbsp olive oil or melted butter
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs panko for extra crunch
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt & pepper to taste

Instructions
 

  • Set oven to 400°F. Lightly grease a baking dish or line with parchment.
  • In a small bowl, mix Dijon mustard and olive oil.
  • In another bowl, combine Parmesan, breadcrumbs, garlic powder, Italian seasoning, paprika, salt, and pepper.
  • Brush each chicken piece with the Dijon mixture, then press into the Parmesan breadcrumb mixture to coat well.
  • Place chicken in the dish and bake for 20–25 minutes, or until internal temp reaches 165°F and the crust is golden.
  • Broil for 2–3 minutes at the end for extra crunch.
