Egg Roll in a Bowl

Ingredients
  

  • 1 lb ground meat turkey, chicken, pork, or beef
  • 1 tbsp sesame oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated (or 1 tsp ground)
  • 1 14-16 oz bag coleslaw mix (or ~5 cups shredded cabbage + carrots)
  • 3 tbsp soy sauce or coconut aminos
  • 1 tbsp rice vinegar
  • 1-2 tsp sriracha optional
  • 2 green onions sliced
  • Salt & pepper to taste

Instructions
 

  • Heat a large skillet over medium heat. Add ground meat and cook until browned, breaking it apart. Drain excess fat if needed.
  • Stir in sesame oil, onion, garlic, and ginger. Cook 2–3 minutes until fragrant.
  • Toss in the coleslaw mix and stir well. Cook for 5–7 minutes until softened but still slightly crisp.
  • Add soy sauce, rice vinegar, and sriracha. Stir and cook another 2–3 minutes.
  • Taste and adjust seasoning. Top with green onions before serving.
