Heat a large skillet over medium heat. Add ground meat and cook until browned, breaking it apart. Drain excess fat if needed.
Stir in sesame oil, onion, garlic, and ginger. Cook 2–3 minutes until fragrant.
Toss in the coleslaw mix and stir well. Cook for 5–7 minutes until softened but still slightly crisp.
Add soy sauce, rice vinegar, and sriracha. Stir and cook another 2–3 minutes.
Taste and adjust seasoning. Top with green onions before serving.
