Peel potatoes and grate them finely.
Mix potatoes, flour, and salt. Add water if needed to make a stiffer dough.
Push dough through a sieve into boiling water.
Boil until gnocchi float to the surface, then boil 2 minutes longer.
Strain gnocchi and place into a bowl.
Add cheese and bacon grease (if using) to bowl with gnocchi and mix.
Serve sprinkled with bacon. Enjoy!
