Grilled Chicken Salad

Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes (halved)
  • 1/2 cucumber (sliced)
  • 1/4 red onion (thinly sliced)
  • 1/4 cup feta cheese (crumbled)
  • 2 tbsp extra virgin olive oil
  • 1/2 lemon (juiced)
  • sea salt (to taste)
  • pepper (to taste)

Instructions
 

  • Preheat the grill to medium-high heat.
  • Season the chicken breasts with salt and pepper.
  • Grill the chicken for 6-8 minutes per side or until cooked through.
  • Remove the chicken from the grill and let it rest for a few minutes before slicing.
  • In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and feta cheese.
  • In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss well to coat.
  • Divide the salad into serving plates and top each plate with sliced grilled chicken.
  • Serve immediately and enjoy!
