Preheat oven to 400℉ and line a baking sheet with parchment paper.
Cut tofu into ½ inch cubes.
Press liquid out of the tofu with paper towels.
Toss the cubes with oil, salt, and pepper. Add cornstarch and toss again.
Spread tofu out on a baking sheet and cook for 20 minutes, flipping halfway through.
In a saucepan, heat olive oil over medium heat.
Add garlic to the pan, and saute for 2 minutes.
Add honey, soy sauce, vinegar, and cornstarch to the pan.
Bring the mixture to a boil for 30-60 seconds until the sauce thickens - stir constantly, and then remove from heat.
Once tofu is done, toss in the sauce.
Serve with rice and veggies.
