Lentil & Quinoa Stew

Ingredients
  

  • 1 cup lentils (green or brown) rinsed
  • ½ cup quinoa rinsed
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 2 carrots diced
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Instructions
 

  • Add all ingredients to a large pot.
  • Bring to a boil, then reduced to simmer for 30 minutes until lentils are tender.
  • Adjust seasoning and serve warm.
