Lentil & Quinoa Stew
Protein per serving: ~ 18 g
- 1 cup lentils (green or brown) rinsed
- ½ cup quinoa rinsed
- 1 can diced tomatoes
- 4 cups vegetable broth
- 2 carrots diced
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- salt and pepper to taste
Add all ingredients to a large pot.
Bring to a boil, then reduced to simmer for 30 minutes until lentils are tender.
Adjust seasoning and serve warm.
