Heat oil in a large pot over medium heat. Add veggies, salt, pepper, thyme, and oregano. Saute for 4 minutes stirring continuously.
Add garlic and saute for another minute.
Add broth, cover and simmer until veggies are tender- about 20 minutes.
Smash some potatoes creating a thicker texture, leave some in bigger chunks.
Add milk and cheese. Stir to combine.
If needed, add salt and pepper to taste.
