Potato Soup with Veggies

Course Soup

Ingredients
  

  • 2 tbsp olive oil
  • 4 cups low sodium broth
  • 2 cups milk
  • 1 cup cheddar cheese shredded
  • 5 medium potatoes peeled and diced
  • 4 carrots peeled and diced
  • 3 ribs celery diced
  • 1 medium onion diced
  • 2 cups broccoli florets chopped
  • 3 cloves garlic minced
  • 2 tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • 1 tsp dried thyme
  • ½ tsp dried oregano

Instructions
 

  • Heat oil in a large pot over medium heat. Add veggies, salt, pepper, thyme, and oregano. Saute for 4 minutes stirring continuously.
  • Add garlic and saute for another minute.
  • Add broth, cover and simmer until veggies are tender- about 20 minutes.
  • Smash some potatoes creating a thicker texture, leave some in bigger chunks.
  • Add milk and cheese. Stir to combine.
  • If needed, add salt and pepper to taste.
