bell peppers

cooked quinoa

black beans
drained and rinsed

cup
corn
½
cup
diced tomatoes

tsp
cumin

shredded cheese
optional
salt and pepper to taste
Instructions
Preheat oven to 375°F.
In a bowl, mix quinoa, beans, corn, tomatoes, cumin, salt, and pepper.
Stuff mixture into peppers and place in a baking dish.
Cover with foil and bake 25 min.
Remove foil, sprinkle with cheese, bake 5 min more.
Add chopped spinach or zucchini for extra veggies.
