Rainbow Salad

Course Salad

Ingredients
  

Dressing Ingredients

  • 2 tbsp Lemon Juice
  • 1 tsp Apple Cider Vinegar
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Honey
  • Sea Salt (to taste)
  • Black Pepper (to taste)

Salad Ingredients

  • 3 cups Baby Spinach
  • 1 cup Purple Cabbage (shredded)
  • 1 cup Cherry Tomatoes (halved)
  • 2 cups Carrots (large, shredded)
  • 1 Yellow Bell Pepper (sliced)
  • 1 cup Cucumber (diced)
  • ¼ cup Red Onion (diced)
  • ¼ cup Fresh Parsley (minced)

Instructions
 

  • In a small bowl, combine dressing ingredients. Mix well then set aside.
  • In a large bowl, add all salad ingredients and mix.
  • Drizzle dressing over top. Garnish with parsley. Optional: add avocado, basil, crushed red pepper.
  • Serve cold and enjoy!
