Chicken Broth (low-sodium)

Cream (optional)
Instructions
Pour the olive oil in a large pot over medium heat.
Add the onion, carrot, sweet potato and pumpkin to the pot, and cook for about 3 minutes.
Season with coconut sugar, nutmeg, cumin, basil, ginger, salt and pepper.
Continue to cook the vegetables until they are soft and brown.
Pour the chicken broth over the vegetables, bringing to a boil, then simmer for 15 minutes.
Take the pot off the heat and blend the soup until there are no clumps.
Add the soup back over medium heat until heated all the way through. Optional: Add cream for desired consistency.
