Simple Pumpkin Soup

Ingredients
  

  • 1 tbsp Extra Virgin Olive Oil
  • 1 Onion, medium (diced)
  • 1 Carrot (chopped)
  • 1 Sweet Potato (chopped)
  • 2 lbs Pumpkin, seeded (chopped)
  • 5 cups Chicken Broth (low-sodium)
  • ½ tbsp Coconut Sugar
  • ½ tsp Cumin
  • ½ tsp Basil
  • ¼ tsp Ginger
  • tsp Nutmeg
  • Salt (to taste)
  • Black Pepper (to taste)
  • Cream (optional)

Instructions
 

  • Pour the olive oil in a large pot over medium heat.
  • Add the onion, carrot, sweet potato and pumpkin to the pot, and cook for about 3 minutes.
  • Season with coconut sugar, nutmeg, cumin, basil, ginger, salt and pepper.
  • Continue to cook the vegetables until they are soft and brown.
  • Pour the chicken broth over the vegetables, bringing to a boil, then simmer for 15 minutes.
  • Take the pot off the heat and blend the soup until there are no clumps.
  • Add the soup back over medium heat until heated all the way through. Optional: Add cream for desired consistency.
