spelt berries

onion
diced

spinach

vegetable broth

grated Parmesan

olive oil
salt and pepper to taste
Instructions
Heat olive oil, sauté onion until translucent.
Add spelt and cook 2 min.
Gradually add broth, stirring frequently, until spelt is tender (25–30 min).
Stir in spinach and Parmesan, season with salt and pepper. Serve warm.
