Spinach Scramble with a Side of Fruit

Ingredients
  

  • 6 eggs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tsp extra virgin olive oil
  • 4 cups baby spinach
  • 2 tomatoes (diced)
  • 2 navel oranges (sliced)

Instructions
 

  • Whisk eggs in a bowl and season with half the salt and half the pepper portions.
  • Head a pan with olive oil, add spinach and cook until wilted. Then add in tomato and cook until softened. Add in remaining salt and pepper.
  • Push vegetables to one side of the pan and add in eggs to other side. Stir eggs frequently until cooked and then mix vegetables into cooked eggs.
  • Transfer egg scramble to plate and serve with sliced oranges on the side.
