Spinach Scramble with a Side of Fruit

baby spinach

tomatoes (diced)

navel oranges (sliced)
Instructions
Whisk eggs in a bowl and season with half the salt and half the pepper portions.
Head a pan with olive oil, add spinach and cook until wilted. Then add in tomato and cook until softened. Add in remaining salt and pepper.
Push vegetables to one side of the pan and add in eggs to other side. Stir eggs frequently until cooked and then mix vegetables into cooked eggs.
Transfer egg scramble to plate and serve with sliced oranges on the side.
