Super Green Avocado Lime Wrap

Ingredients
  

  • 1 whole wheat tortilla (large)
  • 1 cup mixed greens
  • 1/2 cup cucumber (diced)
  • 1/4 cup yellow pepper (diced)
  • 1 tbsp green onions (chopped)
  • 1/4 cup firm tofu
  • 1/4 cup sauerkraut
  • 2 tbsp lime and avocado dressing (or dressing of choice)
  • 1 tbsp extra virgin olive oil

Instructions
 

  • Lightly fry diced tofu in extra virgin olive oil in a pan on stove top.
  • Finely dice/chop vegetables.
  • Add mixed green to unfolded wrap.
  • Add in vegetables, sauerkraut, and tofu.
  • Drizzle on dressing, fold wrap, and enjoy!
