Sweet Potato (peeled and grated in larger holes)

Red Cabbage (shredded, about 1 small head of cabbage)

Scallions (thinly sliced)

Pumpkin Seeds (roasted, salted)
Instructions
Whisk lime juice, oil, maple syrup, and salt in a large bowl.
Add grated sweet potato, shredded cabbage, sliced scallions, and pumpkin seeds. Toss to combine.
Chill in an airtight container. Serve and enjoy!
