Sweet Potato and Cabbage Slaw

Course Side Dish

Ingredients
  

  • ¼ cup Fresh Lime Juice (about 2 limes)
  • 3 tbsp Extra Virgin Olive Oil
  • ½ tbsp Maple Syrup
  • 1 tsp Salt
  • 2⅔ cups Sweet Potato (peeled and grated in larger holes)
  • 2 cups Red Cabbage (shredded, about 1 small head of cabbage)
  • 2 Scallions (thinly sliced)
  • ½ cup Pumpkin Seeds (roasted, salted)

Instructions
 

  • Whisk lime juice, oil, maple syrup, and salt in a large bowl.
  • Add grated sweet potato, shredded cabbage, sliced scallions, and pumpkin seeds. Toss to combine.
  • Chill in an airtight container. Serve and enjoy!
