Onion (medium), roughly chopped

Garlic, minced

Ground Cumin

Low Sodium Vegetable Broth

Fresh Cilantro
Instructions
Add all ingredients except cilantro to the slow cooker.
Cook on low for 5-6 hours (if vegetables are not tender, cook longer).
Stir in cilantro and serve!
