Dietitian / Founder of One Bite Nutrition​

Wendy Castle, MPH, RD, LD, CDCES

My name is Wendy Castle and I am a Registered Dietitian and Certified Diabetes Care and Education Specialist. I have a passion for nutrition and helping others find their way towards wellness. I specialize in diabetes education and management, but also see patients for weight loss, food sensitivities/allergies, kidney disease, GI disorders, heart disease and much, much more. If I cannot help you, I hope I can refer you to one of my knowledgeable colleagues as I continue to grow my professional network.

Just a little background…

I grew up in a suburb of Chicago, Illinois but currently live at the beautiful Lake of the Ozarks, Missouri. I consider myself blessed to have had the opportunity to be a part of this wonderful community. I completed my undergraduate program at The University of Illinois at Urbana-Champaign in Food Science and Human Nutrition. I then completed my dietetic internship at the Missouri Department of Health and Senior Services. I went on to earn my Master’s in Public Health at Missouri State University. I hope to continue to expand my professional knowledge base in the future… not sure if that will be a degree or further certifications.

Dietitian & Health Coach

Jennifer Bass, RD, LD

My name is Jennifer Bass and I am a Registered Dietitian Nutritionist and Certified Health Coach from Iowa. I completed my Bachelor’s and Dietetic Internship through Iowa State University and have experience with a wide array of health conditions. I started my career in dialysis, counseling individuals with kidney disease. I have also been an outpatient and weight loss dietitian and a Food and Nutrition Manager for a hospital where I have counseled on diabetes, hypertension, cardiovascular disease and GI disorders just to name a few.

I deeply believe it is not enough to just give you instructions and send you on your way. I have a passion for helping clients translate the nutrition education you receive into realistic and achievable action steps that can be applied to your individual life. I love to dig deep and really get to know my clients in order to help you make lasting changes to improve your health.

In my free time, I enjoy gardening and experimenting with plant-based cooking but usually I can be found sitting on bleachers in a gym somewhere or working on a home-improvement project on the acreage where I live with husband, four daughters and my “Velcro” golden-retriever, Remi who is never far from my side.

Nikki Bomar, RD, LD​

My name is Nikki Bomar and I am a Registered Dietitian. I completed my undergraduate degree at Missouri State University in Dietetics and my dietetic internship through Keith and Associates. I look forward to expanding my knowledge in areas of interest in the future, whether that be through a master’s program or specialty certificate.

I have worked with patients who have a wide array of challenges and believe in a slow-but-steady approach. I aim to help you achieve your goals in a realistic and maintainable way.

Outside of work, my hobbies include reading, food preservation, cooking, and my pets who like to be included in everything I do!

Dietitian

Sarah Ernst, RD, LD

My name is Sarah Ernst and I am a Registered Dietitian, originally from the Kansas City area. I completed my Bachelor of Science in Nutrition and Dietetics through The University of Alabama. I then completed my Master’s degree and dietetic internship through Iowa State University.

My main focus is working with patients through their eating disorder recovery. I have experience in both in patient and outpatient settings, working with all age groups. I especially enjoy partnering with adolescents and their caregivers as they navigate recovery, working closely with the rest of their outpatient team which may include a therapist, physiatrist, or other mental health professionals. I enjoy getting to know my patients on a personal level, creating an ongoing partnership to improve their health through nutrition.

In my free time I enjoy traveling and outdoor activities like kayaking and hiking. My husband and I recently picked up disc golfing! We have been lucky enough to live in multiple places across the country through the Marine Corps, and are excited for each new adventure with our dog, Lemmie, who is the best road trip buddy.

Dietitian

Holly Bruemmer, MPPD, RD, LD

My name is Holly Bruemmer and I am a Registered Dietitian from a little town in Missouri called, Mary’s Home. I completed my undergraduate degree at Missouri State University in Dietetics. I then went on to complete an internship and Master’s degree through Iowa State University.

I mainly work with patients in an acute care hospital setting. I enjoy meeting with different patients and working to improve their nutrition for a successful discharge. I also work at a health and rehabilitation center. I work closely with other staff members and the residents to insure the residents are receiving adequate nutrition.

In my free time I enjoy working out, going for walks, golfing, and spending time with friends and family. I also have recently taken up gardening. My husband and I have a cat (Tigger) and dog (Wiley) who we absolutely love!

Sarah McEnnis, RD, LD

My name is Sarah McEnnis and I’m a Registered Dietitian here at One Bite Nutrition. I obtained my Bachelor in Science degree from Missouri State University, and then went on to complete my graduate degree and dietetic internship through Illinois State University.
 
Throughout my college career, I had the opportunity to gain experience in various areas of dietetics, allowing me to narrow down my interests in the field. I discovered a passion for helping people better understand their health and provide them with tips and tricks to reach their health goals. With my patients, I advocate for manageable lifestyle changes to promote a sustainable, healthy life for years to come. I enjoy meeting with a variety of patients, including those who are looking to lose weight, struggle with chronic disease, and those who have a troubled relationship with food. 
 
In my free time, I enjoy reading, cooking, baking, hanging out with family and friends, and spending time outside with my husband and our fur babies. 

Virtual Assistant

Kaitlyn Comeau, RD, BScAHN

My name is Kaitlyn Comeau and I’m a virtual assistant at One Bite Nutrition. I graduated from Mount Saint Vincent University in Nova Scotia, Canada with a BScAHN in Nutrition (Dietetics) back in 2013.

I’m a work-from-home dietitian, virtual assistant for other dietitians, freelance health writer, fitness trainer, and the self-proclaimed sports manager of the house and bonus mom, who helps other busy ladies take the hassle out of healthy living. My side hustle includes writing content to empower women to make time for their health and wellness (nutrition, movement, recovery and rest) while balancing life’s priorities.

In my free time you’ll find me outside enjoying our cottage-life on the lake, or freezing in a hockey rink for 9 months of the year with the kids.
