
Classic Potato Soup
Course Soup
Ingredients
- 1 tbsp olive oil
- 1 medium onion diced
- 1 medium carrot peeled and diced
- 1 rib celery diced
- 1 ¾ tsp salt
- ¼ tsp pepper
- 3 cloves garlic minced
- ¼ cup flour
- 2 lb russet potatoes peeled and diced
- 3 cups low sodium broth
- 2 cups milk
Instructions
- Heat oil in a large pot over medium-low heat. Add onion, carrot, celery, salt and pepper. Cook for 5 minutes.
- Stir in garlic and cook until fragrant. Add flour, stir, and cook for 1 minutes.
- Add potatoes, broth, and milk. Bring to a simmer over medium-high heat. Reduce to a simmer, cover, and cook for 15 minutes. Stir occasionally, scrapping bottom of the pot.
- Add salt and pepper to taste if needed.
- Serve with optional toppings.

Optional Toppings: cheese, green onions, crumbled bacon, sour cream
