Cucumber and Black Bean Salad

Ingredients
- 1 15 oz can black beans drained and rinsed
- 1 cucumber diced
- ⅓ cup finely chopped red onion
- ½ cup chopped cilantro
- 2 tbsp crumbled feta cheese
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- ½ tsp cumin
- ⅛ tsp garlic powder
- ¼ tsp salt
- fresh cracked pepper to taste
Instructions
- Soak red onion in ice water for 5 minutes.
- In a small bowl, mix olive oil, vinegar, cumin, garlic powder, salt, and pepper.
- Add beans, cucumber, onion, cilantro, and feta to a large bowl.
- Pour dressing over the top and fold into salad.
- Let it sit for 10 minutes in the refrigerator before serving.
