Cucumber and Black Bean Salad

Ingredients
  

  • 1 15 oz can black beans drained and rinsed
  • 1 cucumber diced
  • cup finely chopped red onion
  • ½ cup chopped cilantro
  • 2 tbsp crumbled feta cheese
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • ½ tsp cumin
  • tsp garlic powder
  • ¼ tsp salt
  • fresh cracked pepper to taste

Instructions
 

  • Soak red onion in ice water for 5 minutes.
  • In a small bowl, mix olive oil, vinegar, cumin, garlic powder, salt, and pepper.
  • Add beans, cucumber, onion, cilantro, and feta to a large bowl.
  • Pour dressing over the top and fold into salad.
  • Let it sit for 10 minutes in the refrigerator before serving.
