Ingredients
- 1 cup cooked freekeh
- 1 cup parsley chopped
- ½ cup mint chopped
- 1 cup tomatoes diced
- ½ cup cucumber diced
- juice of 1 lemon
- 2 tbsp olive oil
- salt to taste
Instructions
- Combine freekeh, parsley, mint, tomatoes, cucumber in a bowl.
- Drizzle with lemon juice and olive oil, season with salt, toss to combine.
Notes
Tips: Chill 30 min before serving for better flavor.
