Ingredients
  

  • 1 cup cooked freekeh
  • 1 cup parsley chopped
  • ½ cup mint chopped
  • 1 cup tomatoes diced
  • ½ cup cucumber diced
  • juice of 1 lemon
  • 2 tbsp olive oil
  • salt to taste

Instructions
 

  • Combine freekeh, parsley, mint, tomatoes, cucumber in a bowl.
  • Drizzle with lemon juice and olive oil, season with salt, toss to combine.

Notes

Tips: Chill 30 min before serving for better flavor.
