Spelt Risotto with Spinach & Parmesan

Ingredients
  

  • 1 cup spelt berries
  • 1 small onion diced
  • 2 cups spinach
  • 4 cups vegetable broth
  • ¼ cup grated Parmesan
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Heat olive oil, sauté onion until translucent.
  • Add spelt and cook 2 min.
  • Gradually add broth, stirring frequently, until spelt is tender (25–30 min).
  • Stir in spinach and Parmesan, season with salt and pepper. Serve warm.
