Ingredients
- 1 cup spelt berries
- 1 small onion diced
- 2 cups spinach
- 4 cups vegetable broth
- ¼ cup grated Parmesan
- 1 tbsp olive oil
- salt and pepper to taste
Instructions
- Heat olive oil, sauté onion until translucent.
- Add spelt and cook 2 min.
- Gradually add broth, stirring frequently, until spelt is tender (25–30 min).
- Stir in spinach and Parmesan, season with salt and pepper. Serve warm.
