
Veggie Egg Muffins
Makes 6–8 muffins

Ingredients
- 6 eggs
- ½ cup diced bell peppers
- ½ cup spinach
- ¼ cup onion
- Salt & pepper
Instructions
- Preheat oven to 375°F.
- Whisk eggs, stir in veggies.
- Pour into greased muffin tin.
- Bake 18–22 minutes.
