Ingredients
For the dressing
- ⅓ cup Extra Virgin Olive Oil
- 2 tbsp Balsamic Vinegar
- 2 tbsp Mayo
- ½ tbsp Dijon Mustard
- 1 clove Garlic (minced)
- ½ tsp Dried Basil
- ¼ tsp Sea Salt
- ¼ tsp Fresh Cracked Pepper
For the salad
- 8 oz Penne Pasta
- 8 oz Kale (chopped)
- 1 pint Grape Tomatoes
- ½ Red Onion
- 15 oz Canned Chickpeas (rinsed and drained)
- ½ cup Parmesan Cheese (grated)
Instructions
- Whisk together dressing ingredients until smooth and creamy. Set aside.
- Boil pasta to al dente. Drain and cool.
- Add kale to a large bowl. Drizzle 1/3 of the prepared dressing and massage into kale. Continue for 3-5 minutes until kale has wilted to half its volume.
- Slice grape tomatoes in half. Thinly slice red onion.
- Add the cooled pasta to the kale. Add the tomatoes, onions, chickpeas, and parmesan.
- Pour the rest of the dressing over top and stir salad until well combined.
- Add salt and pepper to taste. Serve and enjoy!
