Ingredients
  

  • lb Sweet Potatoes, peeled and cut into 1-inch pieces
  • cups Dried Lentils, rinsed
  • 3 Carrots (medium), peeled and cut into 1-inch pieces
  • 1 Onion (medium), roughly chopped
  • 4 cloves Garlic, minced
  • ½ tsp Ground Cumin
  • ¼ tsp Ground Ginger
  • ¼ tsp Cayenne Pepper
  • 32 oz Low Sodium Vegetable Broth
  • ¼ cup Fresh Cilantro

Instructions
 

  • Add all ingredients except cilantro to the slow cooker.
  • Cook on low for 5-6 hours (if vegetables are not tender, cook longer).
  • Stir in cilantro and serve!
