Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1 Onion, medium (diced)
- 1 Carrot (chopped)
- 1 Sweet Potato (chopped)
- 2 lbs Pumpkin, seeded (chopped)
- 5 cups Chicken Broth (low-sodium)
- ½ tbsp Coconut Sugar
- ½ tsp Cumin
- ½ tsp Basil
- ¼ tsp Ginger
- ⅛ tsp Nutmeg
- Salt (to taste)
- Black Pepper (to taste)
- Cream (optional)
Instructions
- Pour the olive oil in a large pot over medium heat.
- Add the onion, carrot, sweet potato and pumpkin to the pot, and cook for about 3 minutes.
- Season with coconut sugar, nutmeg, cumin, basil, ginger, salt and pepper.
- Continue to cook the vegetables until they are soft and brown.
- Pour the chicken broth over the vegetables, bringing to a boil, then simmer for 15 minutes.
- Take the pot off the heat and blend the soup until there are no clumps.
- Add the soup back over medium heat until heated all the way through. Optional: Add cream for desired consistency.
