
Potato Soup with Veggies
Course Soup
Ingredients
- 2 tbsp olive oil
- 4 cups low sodium broth
- 2 cups milk
- 1 cup cheddar cheese shredded
- 5 medium potatoes peeled and diced
- 4 carrots peeled and diced
- 3 ribs celery diced
- 1 medium onion diced
- 2 cups broccoli florets chopped
- 3 cloves garlic minced
- 2 tsp salt
- 1 tsp pepper
- ½ tsp garlic powder
- 1 tsp dried thyme
- ½ tsp dried oregano
Instructions
- Heat oil in a large pot over medium heat. Add veggies, salt, pepper, thyme, and oregano. Saute for 4 minutes stirring continuously.
- Add garlic and saute for another minute.
- Add broth, cover and simmer until veggies are tender- about 20 minutes.
- Smash some potatoes creating a thicker texture, leave some in bigger chunks.
- Add milk and cheese. Stir to combine.
- If needed, add salt and pepper to taste.
