
Broccoli Cheddar Soup
Course Soup
Ingredients
- 1 tbsp olive oil
- ½ medium onion diced
- ¼ cup butter
- ¼ cup flour
- 2 cups milk
- 2 cups chicken stock
- 1 ½ cups broccoli florets chopped
- 3 carrots peeled and chopped
- 1 rib celery chopped
- 2 ½ cups sharp cheddar cheese shredded
- salt and pepper to taste
Instructions
- Heat oil in a skillet over medium-high heat. Add onion and cook for 5 minutes. Set aside.
- In a large pot, melt butter over medium-low heat. Whisk in flour and cook for 4 minutes, whisking continuously.
- Slowly add in milk, continuing to whisk constantly.
- Add in chicken broth and bring to a simmer for 15-20 minutes or until thickened.
- Add in broccoli, carrots, celery, and onion. Simmer for 15 minutes.
- Stir in cheese and season with salt and pepper.
