
Beef and Barley Stew
Course Soup
Ingredients
- 1 lbs lean ground beef
- 2 tbsp olive oil
- 4 medium carrots peeled and chopped
- 4 ribs celery chopped
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp minced garlic
- ½ tsp oregano
- ½ tsp thyme
- ¼ tsp basil
- ¼ cup tomato paste
- 4 cups low sodium broth
- 2 cups water
- 2 cups diced tomatoes
- 1 cup pearl barley, rinsed
Instructions
- Brown beef in a large pot over medium heat with oil until cooked through.
- Add veggies, salt, and pepper. Cook for 5 minutes.
- Add garlic and spices. Cook for 3 minutes.
- Add tomato paste, broth, and water. Stir and cook for 15 minutes, covered.
- Add tomatoes and barley. Stir, cover, and cook for 30 minutes.
- Serve and enjoy!
