
Spanish Rice
Ingredients
- 1 tbsp olive oil
- ½ medium onion diced
- 1 tbsp garlic minced
- 1 cup rice
- 1 ¾ cup water
- 1 tbsp tomato bullion
- ½ tsp cumin
- ¼ tsp chili powder
- ¼ tsp paprika
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup tomato sauce
Instructions
- In a small bowl, mix together water and seasonings. Set aside.
- In a medium or large pan, heat oil over medium-high heat. Cook onion and garlic until onion is translucent.
- Add water mixture and tomato sauce, cover and bring to a boil.
- Add rice, cover, and return to a boil. Reduce heat and simmer for 20 minutes, covered.
- Stir, cover, and remove from heat.
- Let sit for 10 minutes.
