
Breakfast Burritos
Ingredients
- 2 tbsp olive oil
- 1 green pepper diced
- ½ medium onion diced
- 1 tsp chili powder
- ½ tsp cumin
- 1 15 oz can black beans drained and rinsed
- 8 whole eggs
- 1 ½ cups cheddar cheese shredded
- 6 10 inch tortillas
- salt and pepper
Instructions
- Heat oil in a skillet over medium heat. Add peppers, onions, and chili powder.
- Use salt and pepper to taste. Saute for 4 minutes. Remove from pan and set aside.
- In a separate bowl, whisk eggs. Add to skillet and scramble eggs.
- Add beans to skillet and cook until heated.
- Assemble burritos by splitting cheese, veggie, and egg mixtures between the 6 tortillas. Be sure to leave room at one side for folding. Roll burrito.
- Heat skillet to medium heat. Place burritos seam side down and cook for 1-2 minutes to seal edge.
- Roll in parchment paper and store in a freezer bag.
- To reheat- microwave for 3-4 minutes.
- Serve with toppings such as salsa, hot sauce, avocado, etc.
