
Breakfast Sandwiches
Ingredients
- ½ tbsp olive oil
- 3 cups baby spinach
- 8 eggs
- ½ cup cottage cheese
- 1 tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- Dash of cayenne pepper (optional)
- 6 English muffins
- 6 cooked sausage patties pork, chicken, turkey
- 6 slices cheddar cheese
Instructions
- Preheat oven to 350*F. Spray 9×13 pan with oil, set aside.
- Heat oil in a large skillet over medium heat. Add spinach and cook until wilted. Set aside.
- In a large bowl, whisk eggs, cottage cheese, and seasonings.
- Add spinach to egg mixture and whisk again.
- Pour mixture into pan. Bake for 15 minutes or until eggs are cooked through.
- Let cool and cut into 6 squares.
- Assemble sandwich with English muffin, egg, sausage, and cheese.
- Wrap in parchment paper and place into a freezer bag.
- To reheat, microwave for 2 minutes or airfry to 5-6 minutes.
