Bulgar Stuffed Zucchini

Ingredients
  

  • 4 medium zucchinis halved and seeded
  • 1 cup cooked bulgar
  • ½ cup diced tomatoes
  • ½ cup onion diced
  • 1 tsp cumin
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F.
  • Sauté onion and tomatoes in olive oil, add cumin, salt, pepper.
  • Mix with cooked bulgur, stuff into zucchini halves.
  • Bake 20–25 min until tender.
  • Sprinkle cheese on top if desired.
