
Bulgar Stuffed Zucchini

Ingredients
- 4 medium zucchinis halved and seeded
- 1 cup cooked bulgar
- ½ cup diced tomatoes
- ½ cup onion diced
- 1 tsp cumin
- 2 tbsp olive oil
- salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Sauté onion and tomatoes in olive oil, add cumin, salt, pepper.
- Mix with cooked bulgur, stuff into zucchini halves.
- Bake 20–25 min until tender.
- Sprinkle cheese on top if desired.
