
Chicken Burrito Bowl
Ingredients
- 6 cups cooked Spanish rice
- 1 ½ lbs chicken breast, diced
- 2 tsp cumin
- 2 tsp salt
- 2 tsp pepper
- 1 tbsp olive oil
- 2 15 oz cans black beans drained and rinsed
- 1 cup Monterey jack cheese
- ½ cup salsa
Instructions
- Mix together seasonings and toss with diced chicken.
- Heat oil in a large skillet over medium-high heat. Cook chicken for 8-10 minutes until cooked through.
- If eating now, layer components and top with toppings.
- If freezing, lay out 8 airtight containers. Layer rice, beans, chicken, salsa and cheese.
- Place plastic wrap over the container, followed by the lid.
- When reheating, remove plastic wrap and microwave for 2 minutes. Stir halfway through. Top with toppings and enjoy.
Notes
Optional toppings: lettuce, sour cream, avocado, cilantro, onions, lime, pic de gallo or salsa
