Chicken Fajita Bowl
Ingredients
- 3 cups Rice, cooked
- 1½ lbs Chicken Breasts
- 4 Bell Peppers
- 1 Onion, medium
- ¼ cup Extra Virgin Olive Oil
- ½ cup Salsa
- 1 tbsp Chili Powder
- ½ tsp Cumin
- 1 tsp Garlic Powder
- ½ tsp Oregano
- ¼ tsp Black Pepper
- 1 tsp Seasoning Salt
Optional Toppings
- Shredded Cheese
- Tomatoes, diced
- Green Onion, chopped
- Salsa
- Cilantro
- Sour Cream
- Avocado
- Lime
Instructions
- Preheat oven to 425 *F
- In a small bowl, combine oil and seasonings. Set aside.
- Dice chicken, toss with half the oil mixture.
- Cut pepper and onions into slices. Toss with the remaining half of oil mixture.
- Place peppers, onions, and chicken onto a baking sheet. Bake for 20-24 minutes, or until chicken is fully cooked. Stir halfway through.
- Layer cooked rice, chicken and peppers, and toppings into meal prep containers (some optional toppings pay to better on the side until ready to eat).
