Couscous with Roasted Pumpkin and Chorizo

Ingredients
- 2 cups Pumpkin, diced
- 2 Zucchini (large), diced
- 1½ cup Pearl Couscous
- 1 Chorizo, thinly sliced
- ¼ cup Lemon Juice
- 1 tbsp Extra Virgin Olive Oil
- 1 tsp Smoked Paprika
- Salt (to taste)
Instructions
- Preheat oven to 400*F. Line baking sheet with parchment. Spread pumpkin and zucchini on top. Spray with oil and sprinkle with salt. Roast for 20 minutes.
