Creamy Mushroom Farro Rissoto

Ingredients
  

  • 1 cup farro
  • 2 cups sliced mushrooms
  • 1 small onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable broth warm
  • ¼ cup grated Parmesan
  • 1 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Heat oil in a large pan, sauté onion and garlic until fragrant.
  • Add mushrooms, and cook for 5 min.
  • Stir in farro and gradually add broth, 1 cup at a time, stirring until liquid is absorbed.
  • Cook until farro is tender and creamy (about 25 min).
  • Stir in parmesan, season with salt and pepper, serve warm.

Notes

Tips: Add fresh parsley or thyme for extra flavor.
