
Creamy Mushroom Farro Rissoto

Ingredients
- 1 cup farro
- 2 cups sliced mushrooms
- 1 small onion diced
- 2 cloves garlic minced
- 4 cups vegetable broth warm
- ¼ cup grated Parmesan
- 1 tbsp olive oil
- salt and pepper to taste
Instructions
- Heat oil in a large pan, sauté onion and garlic until fragrant.
- Add mushrooms, and cook for 5 min.
- Stir in farro and gradually add broth, 1 cup at a time, stirring until liquid is absorbed.
- Cook until farro is tender and creamy (about 25 min).
- Stir in parmesan, season with salt and pepper, serve warm.
Notes
Tips: Add fresh parsley or thyme for extra flavor.
