Gnocchi with Sheep Cheese

Ingredients
  

  • 5 cups Potatoes
  • 4 cups Flour
  • 2 oz Bacon (cooked and chopped)
  • ¼ cup Sheep Cheese (bryndza if you can find it, if not, use feta)
  • Salt (to taste)
  • Bacon grease (optional)

Instructions
 

  • Peel potatoes and grate them finely.
  • Mix potatoes, flour, and salt. Add water if needed to make a stiffer dough.
  • Push dough through a sieve into boiling water.
  • Boil until gnocchi float to the surface, then boil 2 minutes longer.
  • Strain gnocchi and place into a bowl.
  • Add cheese and bacon grease (if using) to bowl with gnocchi and mix.
