
Quinoa Stuffed Bell Peppers

Ingredients
- 4 bell peppers halved
- 1 cup cooked quinoa
- ½ cup black beans drained and rinsed
- ½ cup corn
- ½ cup diced tomatoes
- 1 tsp cumin
- ½ cup shredded cheese optional
- salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- In a bowl, mix quinoa, beans, corn, tomatoes, cumin, salt, and pepper.
- Stuff mixture into peppers and place in a baking dish.
- Cover with foil and bake 25 min.
- Remove foil, sprinkle with cheese, bake 5 min more.
- Add chopped spinach or zucchini for extra veggies.
