Quinoa Stuffed Bell Peppers

Ingredients
  

  • 4 bell peppers halved
  • 1 cup cooked quinoa
  • ½ cup black beans drained and rinsed
  • ½ cup corn
  • ½ cup diced tomatoes
  • 1 tsp cumin
  • ½ cup shredded cheese optional
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F.
  • In a bowl, mix quinoa, beans, corn, tomatoes, cumin, salt, and pepper.
  • Stuff mixture into peppers and place in a baking dish.
  • Cover with foil and bake 25 min.
  • Remove foil, sprinkle with cheese, bake 5 min more.
  • Add chopped spinach or zucchini for extra veggies.
