Roasted Veggie Freekeh Bowl

Ingredients
  

  • 1 cup freekeh cooked
  • 1 cup sweet potatoes diced
  • 1 cup broccoli florets
  • 2 tbsp olive oil
  • salt, pepper, and paprika to taste
  • 2 tbsp tahini sauce

Instructions
 

  • Preheat oven to 400°F. Toss sweet potatoes and broccoli in olive oil, salt, pepper, paprika.
  • Roast 20–25 min until tender.
  • Serve roasted veggies over freekeh and drizzle with tahini sauce.

Notes

Tips: Add chickpeas for protein boost.
