Ingredients
- 1 cup freekeh cooked
- 1 cup sweet potatoes diced
- 1 cup broccoli florets
- 2 tbsp olive oil
- salt, pepper, and paprika to taste
- 2 tbsp tahini sauce
Instructions
- Preheat oven to 400°F. Toss sweet potatoes and broccoli in olive oil, salt, pepper, paprika.
- Roast 20–25 min until tender.
- Serve roasted veggies over freekeh and drizzle with tahini sauce.
Notes
Tips: Add chickpeas for protein boost.
