Sheet Pan Veggies and Sausage

Ingredients
  

  • 12-13 oz chicken or turkey sausage (I like to use turkey kielbasa) sliced
  • 1 red bell pepper
  • 1 red onion
  • 1 head of broccoli
  • 1 sweet potato
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 ½ tsp oregano
  • 1 tbsp parsley chopped

Instructions
 

  • Preheat oven to 425 °F
  • Slice sausages diagonally.
  • Chop bell pepper, onion, broccoli, and sweet potato.
  • Add sausage and chopped vegetables to a large bowl. Drizzle with olive oil and season with salt, pepper, garlic powder, and oregano. Toss to evenly coat.
  • Spread mixture onto baking sheet lined with parchment paper.
  • Roast for 15 minutes or until vegetables are tender.
  • Serve with parsley garnish.
