Sheet Pan Veggies and Sausage

- 12-13 oz chicken or turkey sausage (I like to use turkey kielbasa) sliced
- 1 red bell pepper
- 1 red onion
- 1 head of broccoli
- 1 sweet potato
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1 ½ tsp oregano
- 1 tbsp parsley chopped
Instructions
- Preheat oven to 425 °F
- Slice sausages diagonally.
- Chop bell pepper, onion, broccoli, and sweet potato.
- Add sausage and chopped vegetables to a large bowl. Drizzle with olive oil and season with salt, pepper, garlic powder, and oregano. Toss to evenly coat.
- Spread mixture onto baking sheet lined with parchment paper.
- Roast for 15 minutes or until vegetables are tender.
- Serve with parsley garnish.
