Spinach Scramble with a Side of Fruit

Ingredients
- 6 eggs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tsp extra virgin olive oil
- 4 cups baby spinach
- 2 tomatoes (diced)
- 2 navel oranges (sliced)
Instructions
- Whisk eggs in a bowl and season with half the salt and half the pepper portions.
- Head a pan with olive oil, add spinach and cook until wilted. Then add in tomato and cook until softened. Add in remaining salt and pepper.
- Push vegetables to one side of the pan and add in eggs to other side. Stir eggs frequently until cooked and then mix vegetables into cooked eggs.
- Transfer egg scramble to plate and serve with sliced oranges on the side.
